I had every inten
tion yesterday of making Old Pipe Smoker's White-Cheddar Corn Chowder but decided to wait on the carbs since I've been doing so well on the diet. So, I ended up making a pot of BigJolly's Quck-n-Easy Chili.
It was such a cold and wet day, the chili seemed like a natural choice. Certainly not a traditional Texas chili ala Texpat's but it is super easy and the taste is very complex for such a simple dish. The key to that is to use fresh ingredients and to use a good Italian sausage. I use the stuff that Kroger's makes and try to find it almost out of date. Seems to add a bit of flavor that way.
Ended up eating the carbs anyway. When we were growing up, we weren't exactly the richest family in town so my mama learned to stretch everything with rice and beans. Although I no longer like beans with my chili, it doesn't seem right to have a bowl of chili unless it is poured over a big scoop of rice!
Definitely not the traditional stuff but you'll never know if you like it unless you get in the kitchen and whip up a batch. Now get to it!
